A Mediterranean twist on traditional salami. Cornish Charcuterie Black Olive Salami is made with hand-chopped black olives that are incorporated following the mincing stage. Visible pieces of olive add their own unique texture and flavour.


Made to an Italian recipe with home reared Cornish Lop pork and Ruby beef in traditional ratios. The meat is enhanced with carefully sourced herbs and spices before being gently smoked over beech chippings. The sausages are then left to mature for 10 days to 8 weeks, depending on size.


Vacuum packaged for freshness, these sticks make a perfect rustic edition to any picnic basket, hamper or charcuterie board. They also look fantastic hanging up in the kitchen.


These salami sticks can be stored in a cool, dry place and have a shelf life of 4 weeks. Due to the limited shelf life of these products we only hold very limited stock to ensure shelf life is never compromised.


Ingredients: pork 98%, beef 36%, black olive 1.5%, spices, salt, preservative: E250 sodium nitrate.

    Cornish Charcuterie are renowned for their artisan British salami and chorizo, made by hand in Cornwall from home reared Cornish lop pork.  Chose from classic traditional flavours, to the icon seaweed and cider salami, made to evoke the flavours of Cornwall.

    We decided to include Cornish Charcuterie products along side Somerset Charcuterie and Chiltern Charcuterie because they really complement the range. If you like a firm charcuterie then Somerset is the one for you; a softer charcuterie, go for Chiltern and if you want a charcuterie featuring a slightly higher Cornish Lop Pork fat ratio, then go for the Cornish. All different but all delicious!
