Often when I review a sauce I will highlight a particular feature...double oak smoked or fermented for example. With Woolf's Kitchen I found myself hunting for a standout feature, it took a number of attempts across a wide range of dishes and cuisines...and that's when I realised; the standout feature is simply their versatility.
